New house, new pizza method! We’re doing it on the grill now with a cast iron baking sheet. It works pretty well, but burning bottoms are a problem. Here’s what seems to be good:
Preheat grill on high until around 450 degrees.
Slide in pizza, close grill. Reduce heat to medium. Cook 5 minutes.
Turn. Cook 4-5 minutes more.
Remove and let rest 1 minute before cutting.
I used this Ooni Neapolitan recipe, dividing into 3 balls. Used Anson Mills pizza flour and added a DRIZZLE of olive oil and PINCH of sugar to the mix.
Anson mills flour is really amazing.
